Liquorice powder, ground from liquorice root, is a delicious spice used in both sweet and savoury dishes. Thanks to its intense aniseed flavours and a natural sweetness, liquorice powder is often found in Chinese Five Spice mixes, as well as Indian dishes – where it’s better known as jethimadh powder – and is often stirred into curries to enhance star anise, and fennel-like flavours.

As well as curries and slow-braised dishes, liquorice powder also works well when mixed into sweet custards and sugar syrups. Try using the powder to make liquorice ice cream, or liquorice crème brulee – or even dust a little of the powder over chocolate or fruit-based desserts as a fragrant and flavoursome garnish.
